Vegetable side dish
Ingredients
4 medium Zucchinis chopped in 1/2 inch quaters
2 Tbls. olive oil
4 Tbls. fresh oregano chopped
4 Tbls. fresh parsley chopped
8 Homemade sundried (dehydrated) tomatoes (see recipe for sundried tomatoes)
S&P
20z. organic feta cheese
Preparation Directions
Saute Zucchini in olive oil on med high till just browned and slightly crisp. Sprinkle with sundried tomatoes and oregano and saute 2 min. longer to incorporate flavors. Remove from heat and toss in parsley and feta and toss together. Serve
