Salmon with Roasted Butternut Squash and Mushrooms - One Dish
Complete meal in one Baking dish.
Ingredients
Wild Salmon for 4 people
1 small Butternut Squash sliced thin X 1"
10 ish crimini or white mushrooms sliced
Sauce:
4 Tbls. Olive oil
4 Tbls. Liquid Aminos (soy sauce)
4 Tbls. Honey
2 Tbls. Grey Poupon
1" knob of fresh Turmeric grated fine
1" knob of fresh Ginger grated fine
Preparation Directions
Preheat oven 400'
Place Salmon on oiled baking pan.
Mix sauce. Toss over squash and mushrooms, and mix to coat. Pour over salmon. Push most of the veggies aside to expose most of the fish. Bake at 400' till med...15min ish....depends on thickness of fish. Broil for a few min to brown slightly.
